Egg Curry – Delicious and Easy

Egg is a versatile cooking ingredient. Many people who do not eat meat eat eggs. Delicious and quick, this curry can be ready in 25 minutes.

I call it easiest curry and everyone’s favorite. Meat loves adore it and eggetarian vegetarians like it too. If you have leftover eggs from devil eggs served for a party, you still can make curry with leftovers and enjoy a quick meal with Rice and Eggs. Kids love it for taste of eggs and moms love it because it is healthy for kids. A nice change of pace, and convenient on those days that you might have forgotten to thaw out the meat that you planned to cook. Try this recipe and your family will fall in love with it.

    So I’m trying to determine if this would work with all the leftover turkey I have in the ol’ fridge…

      Culinarian, you can cook as much leftover turkey in Egg Curry gravy as you like it. However, I was trying to say that you can make Egg Curry for a change when you don’t have thawed meat handy.
      But, Egg Curry gravy does go excellent with pre-cooked meats like leftover turkey. Thanks, I did not mention it in post but it makes perfect sense.

    This looks fabulous. I am quite fond of eggs. I never tire of them. Versatile. This dish would make a great main dish.

      Eggs are indeed very under-rated. So versatile, as you said. And a quick source of protein! I like to use the yolks as thickeners in certain sauces and dressings.

      I honestly believe that if chickens could produce milk, they would be the perfect domesticated animal. Or if they could talk and play chess. Either or. :)

      Hanna, if you do not like eggs. you can also use this curry recipe with boiled diced potatoes. Tastes equally delicious with bread or rice. Cheers

    you’ve got to love an egg curry. I think eggs are the best protein to go in one. You can forget your chicken or prawns or whatever. Plus it is super-cheap

    What a great recipe – I have tried something similar in Asia and this makes a great side to accompany some other dishes too. I make a great Tarka dhal which is another great vegetarian option, I’ll post the recipe up soon – give it a try!
