Blueberry Clafoutis – Baked French Dessert

Clafoutis Or Clafouti, is a baked French dessert made of cherries, arranged and baked in pancake-like batter. This simple yet so delicious recipe is traditionally made with cherries or prunes. Fruity berries like blueberry or black berry and even dehydrated prunes (dried plums) go perfect in Clafoutis. I have used fresh blueberries for this recipe. You can also use dried or frozen berries. Clafoutis batter is very easy to make. Clafoutis batter mixes up very easily in just one bowl. It has very simple ingredients, so as long as you have berries on hand, you can literally start making Clafoutis in moment’s notice.

      Blueberries are all time favorite of my husband. I always keep few frozen batches of blueberries in freezer for unexpected demands :) Cheers!!

    I made my first clafoutis last week (blackberry). I followed the recipe exactly, baking it until browned and puffed. It tasted very good but the texture surprised me. It was a bit spongy and wet inside, like a soufflé or pudding. Maybe I should I have cooked it a little longer. Maybe not. What is the right consistency for clafoutis? (By the way – yours looks delicious!)

      Laura, consistency of Clafoutis can very depending upon taste. It can range from being very stiff, like a cake batter, to a very thin mix. Traditionally, Clafoutis’s batter is like slightly thin pancake batter and end result is like a cross between a cake and a pudding.

    My favourite dessert, although I do prefer it with the traditional cherries. I can’t make it though, for some reason the batter always separates slightly so it’s denser at the bottom than at the top. Still tasty though!

    I will definitely try this recipe. I can easily find heavy cream here in Mexico, and occasionally I can find fresh blueberries – but I do have a small stash of mixed dried cherries, blueberries and cranberries – maybe I’ll try that combination for Clafoutis. It looks like an amazing dish!
